South Beach Diet Recipes

This diet is considered to be the latest discovery in nutrition by both medical and nutritional professionals. The South Beach Diet recipes gain their popularity because of their large diversity and availability. They became favorite topic for many TV shows and articles, getting even in the oprah's weight loss special broadcastings. There is large number of southbeach diet recipes on the web and in different printed magazines. Here we’ll offer you some of the well-known and long tested recipes.

South Beach Diet Berry Vanilla Parfait (Phase 2)
3 large strawberries
1/4 cup blueberries (frozen, but defrosted works great)
3/4 cup lowfat sugar free vanilla pudding
1/4 cup Uncle Sam cereal (this almost has a granola thing going on)
1 tbls. fat free cool whip
Layer strawberries cut up on the bottom of a tall glass. (may need some sugar substitute if strawberries aren’t sweet enough)
Add 1/3 of the vanilla pudding on top
Add Uncle Sam cereal
Add 1/3 of the vanilla pudding on top of cereal
Add blueberries
Add remaining pudding
Top with cool whip. .

South Beach Diet Chocolate Dipped Apricots - (Phase 3)
Chocolate Dipped Apricots
2 oz bittersweet chocolate
24 dried apricots
1 Tbsp chopped pistachios
Microwave the chocolate on high for 2 minutes, stirring halfway through until completely melted. Dip the apricots halfway into the chocolate. Let the excess drip off. Place the apricots onto wax paper. Sprinkle the pistachios over the chocolate-covered portions, and place them in the refrigerator until the chocolate is set.

South Beach Deit Chopped-Dipped Strawberries - (Phase 2)
2 squares (1 ounce each) semisweet or bittersweet chocolate, chopped
½ tablespoon whipping cream
Dash almond extract
8 strawberries
Combine the chocolate and the whipping cream in a glass measuring cup or bowl.
Microwave at medium power for 1 minute or until the chocolate melts, stirring after 30 seconds. Stir in the almond extract and cool slightly.
Dip each strawberry into the melted chocolate, allowing the excess to drip off. Place on waxed paper-lined baking sheet.
Refrigerate or freeze for approximately 15 minutes until the chocolate is set.
Serves 2

South Beach Diet Egg Drop Soup - (Phase 1)
4 Cups Chicken Stock
1/4 cup green onion, sliced 1/4 inch pieces
1 egg
1 egg white, slightly beaten
1 teaspoon soy sauce

1. Bring chicken stock to a boil in a large saucepan. Add onions
2. Remove from heat, slowly pour in egg and egg white, stirring gently as you pour. Add soy sauce and stir.

South Beach Diet Egg White Buns - (Phase 1)
Ingredients:
4 eggs -- room temp
1/4 cup ricotta cheese
1/4 teaspoon cream of
tartar
Parmesan cheese -- little or a lot - whatever

How to Prepare:
Set oven to 300
Separate CAREFULLY your eggs.
Beat your whites until stiff peaks form, add cream of tartar, keep beating till really stiff.
Mix yolks, and cheeses together, add a little of your white to the yolk mixture.
Slowly fold in your yolk mixture, trying not to break the whites down, streaky is ok.
Pour in 6 globs on a greasy cookie sheet or in a greased muffin top pan.
Bake for 35-40
Great as a sandwich

South Beach Diet Lemon Couscous Chicken - (Phase 2)
1¼ c water
1 Tbsp extra virgin olive oil
2 c broccoli florets
1 pkg Near East Roasted Garlic & Olive Oil Couscous mix

1½ c chopped cooked chicken
Juice of 1 lemon (about 3 Tbsp)
¼ tsp lemon peel

1. In a large skillet, bring the water, oil, broccoli, and contents of the spice sack from the couscous mix to a boil. Stir in the couscous, chicken, lemon juice, and lemon peel.
2. Remove from the heat. Cover, and let stand for 5 minutes. Fluff lightly with a fork. Chill well, and serve cold.

South Beach Diet Light Spinach Frittata with Tomato Salsa - (Phase 2)
1 T extra virgin olive oil
1 small onion, sliced
2 cloves garlic, minced
1 package (10 oz) frozen spinach, thawed and well drained
2 large eggs
3 egg whites
1/3 cup fat-free evaporated milk
1/2 cup shredded reduced-fat mozzerella cheese

Preheat the oven to 350 F. Heat the oil in a 10" nonstick skillet over medium heat. Add the onion and garlic and cook stirring for 3 minutes or until tender. Stir in the spinach. Reduce the heat to low. In a large bowl, beat the eggs and egg whites with the milk until light yellow and frothy. Pour the egg mixture over the spinach in the skillet. Cook for 5 - 7; minutes, until the egg mixture is cooked on the bottom and almost set on top. Sprinkle with the cheese. Bake in the oven until the eggs are set and the cheese has melted, 5 - 10 minutes.

South Beach Diet Salsa
4 plum tomatoes, seeded and chopped
2 scallions, minced
1 clove garlic, minced
2 T minced fresh cilantro
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

In a large bowl, stir together the tomatoes, scallions, garlic, cilantro, limejuice, salt, and pepper. Serve fresh, at room temperature over the frittata.
You can also serve the frittata with commercial jarred salsa.
Serves 2

South Beach Diet Meat Crust Pizza - (Phase 1)
Brown about 2 pound of extra lean ground beef. Preheat oven to 350 Put beef in a large bowl & mix well with 2 cups of Lf mozzarella cheese. Spread mixture out like a pizza crust on a cookie sheet or a baking stone. Put 1 cup pizza sauce on the mixture. Ragu is ok.(pizza sauce, no sugar in it) Top with 1-2 cups of Lf shredded mozzarella. Top with Canadian bacon and or low fat pepperoni slices I usually just use the Canadian bacon (optional onions, peppers, anything legal that you like on pizza's.) Cook 15 min. or so (when top cheese starts to brown it is done.) Put foil on rack below to catch any drippings.

South Beach Diet Meatloaf - (Phase 2)
1 can (6 oz) no-salt-added tomato paste
½ c dry red wine
½ c water
1 clove garlic, minced
½ tsp dried basil leaves
¼ tsp dried oregano

¼ tsp salt
1 lb ground turkey breast
1 c oatmeal
¼ c liquid egg substitute
½ c shredded zucchini

1. Preheat the oven to 350°F. Combine the tomato paste, wine, water, garlic, basil, oregano, and salt in a small saucepan. Bring to a boil, and reduce the heat to low. Simmer, uncovered, for 15 minutes. Set aside.
2. Combine the turkey, oatmeal, egg substitute, zucchini, and ½ cup of the tomato mixture in a large bowl. Mix well. Shape into a loaf, and place in an ungreased 8" x 4" loaf pan. Bake for 45 minutes. Dicard any drippings. Pour ½ cup of the remaining tomato mixture over the top of the loaf. Bake for 15 minutes longer. Remove to a serving platter. Cool for 10 minutes before slicing. Serve the remaining tomato sauce on the side.
